When I was younger, my single-parent dad mastered the art of Hamburger Helper. He cooked the noodles perfectly, and poured the sauce packet gracefully. Now that my whole family is trying their hand at vegetarianism, I thought I’d share an old family favorite done cruelty-free!
Since I have never cooked Hamburger Helper myself, I scoured the internet to find the best homemade recipes. The one I’m sharing was adapted from The Peaceful Kitchen’s creation. It was pretty perfect the way it was, but I tweaked some things to make it just a tad more flavorful. The “cheesy sauce” is seriously amazing! I left that alone.
I added these Beyond Meat beef-free crumbles that are found in the freezer section of most grocery stores. The website says, “All of the protein, half of the fat — 10g of protein and 4.5g of fat per 55g serving.” Half the fat, and minus the cruelty! I’ll take it.
This recipe is oil-free, easily done gluten-free (just use GF pasta), and 100% delicious!
- 1 1/2 cups cheesy sauce
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 cup frozen or fresh broccoli
- 3 tbsp vegetable broth
- 1/3 cup carrot juice
- 1 15-oz can Italian diced tomatoes
- 3 tbsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 10 oz of your favorite pasta, cooked
- 2 cups Beyond Beef beefy crumble
Prepare sauce according to Vegan Cheese Sauce recipe.
Over medium heat, sauté the onion, garlic and broccoli in vegetable broth until the onion is translucent. Add the carrot juice, diced tomatoes, Italian seasoning, garlic powder, and salt. Simmer on low heat for 15 minutes.
Add cooked pasta, beefy crumbles, and cheesy sauce and stir until warmed. Serve.
