The centerpieces are charming, but should we not begin to consider if, as vegans and animal advocates, we want to continue participating in the turkey symbolism of Thanksgiving? I can remember when a cornucopia full of fruits and vegetables was a symbol of Thanksgiving. Of course, the Pilgrims and the Native Americans have been used as symbols also, but that was a story with a very unhappy ending – much like the story of the turkey and Thanksgiving.
