Chocolate Pecan Pie

Ingredients

  • 2 cups pecans
  • 1 cup maple syrup
  • 1 tbsp vanilla
  • ¼ tsp salt
  • 2 tbsp arrowroot
  • 1/3 cup vegan milk
  • 1 cup melted vegan chocolate chips
  • 1 pre-made vegan pie crust (found in the freezer section), or one recipe of your favorite home-made vegan pie crust

Instructions

  1. Stir the maple syrup, pecans, vanilla, and salt together in a large mixing bowl.
  2. In a separate bowl, whisk together the arrowroot and cold vegan milk.
  3. Add the arrowroot mixture to the maple mixture and mix well.
  4. Whisk the melted chocolate into the pecan-maple mixture, stir well.
  5. Pour the filling into an unbaked pie shell and bake at 350 degrees for about 30 minutes, until the crust is golden brown.
  6. You must let cool before serving–it will firm up, but it needs about 6 hours to do that. Try to make it the day before if you can. If not, let cool on the counter for 2 hours then put in the fridge to finish cooling.
